They come multi-colored while others bear some outlandish stripes. A big plate piled high with sliced tomatoes is a welcome addition to any meal. It's also a snap to get ready. Many other Mexican dishes rely on the use of tomatoes, whether included in a recipe or merely decorating the side of a plate.
